Sweet Potato Muffins


(Makes 12)

450 g sweet potatoes
50 g butter
50 g brown sugar
2 eggs
9 g (1 tbsp) baking powder
1 tbsp light soy sauce
60 ml fresh milk
175 g flour


  1. Boil the sweet potato in a pan of water until soft. Peel and mash.
  2. Heat the oven to 190°C. Cream the butter and sugar together. Add the mashed potato, eggs, baking powder and soy sauce. Stir in the milk and flour and mix thoroughly.
  3. Spoon the mixture into muffin tins or patty cases and bake until cooked.
