Carrot-apple Raisin Salad

Ingredients:

(Makes 6 servings)

3 medium (260 g) size carrots (grated)
1 green apple (115 g) – cut into small cubes
12 cup (85 g) of raisins
3 tbsp (45 g) of mayonnaise or salad dressing
14 tsp (1 g) lemon juice
112 tsp (7.5 g) sugar
14 cup cashew nuts/peanuts – cut bite size (optional)

Method:

  1. Grate carrots and cut apple into small cubes. Mix all ingredients well.
